Tuesday's Child Has Far to Go

Ain't that the truth.

Well I'm sure y'all saw Jen's wonderful healthful meal alternatives. I talked about it further with her last night and it was pretty funny how grossed out she was by my eating soup from a can. I work, I try to keep a 2 year old safe and amused, and I run around around town buying things to keep my household clean and fed. And then there is all the time I put in at the gym, which I admit is a choice and takes up a lot of time I could do other useful stuff, but right now it is a priority for me. So I am not so good at taking time to prepare meals from scratch. But we'll see. I may have to try the iced tea.

So yesterday's food. I think I forgot to eat breakfast again. I fully intended to have a bowl of oatmeal, but I got busy with work and next thing I knew it was time for rehab and then lunch.

Breakfast:
16 oz Wawa coffee

Workout (rehab for knees)
10 minutes biking
5 minutes walking
30 minutes lower body weightlifting and exercises

Lunch:
Boston Market chicken breast (no skin)
buttered corn
new potatoes
1 cornbread
diet coke

Dinner:
1 apple
2 tbsp peanut butter
1 handful triscuits

Workout
1 hour yoga class!

Snack
100 calorie pack of Cheese-its
8 oz Gatorade

    First, good sub on the coffee!

    second, the largest thing here is not time, but organization. if you're organized, then you're more likely to have things around that you need. (more later)

    third, when eating out, go for the thing that has the most raw or whole foods in them. Instead of a sandwich, go for a salad. get dressingon the side or none at all. meat isn't necessary--but if you're going to get it get chicken breast rather than deli meats (like turkey--tends to be deli meat).

    whether in your home or out, eating raw is simple. typically, there's no cooking or time required. Grab an apple and a handful of nuts and you're satisfied (and so is kiddo). Or, dip cut apples in nut butter (get natural pea nut butter with nothing added)--little kids love dips. make dips out of canned beans (it's as simple as blending beans, garlic and olive oil to make hummus or black beans with salsa to make black bean dip) and use cut veggies which takes only a matter of moments.

    it's really about having good food on hand, ready to go or easy to prep, or making good choices while on the go.

    ITA with Jen about the organization factor. Just like that old saying, "if you fail to plan, you plan to fail."

    Also, eat breakfast! Please!!!!

    Quaker makes a good alternative to hot oatmeal. It's called Oatmeal To Go and it comes in 4 different flavors. It's an oatmeal square, about the size of a floppy diskette. It has 220 calories, 4 g fat, and 5 g protein. Plus 20% of most of the essential vitamins and minerals. You can even nuke it for 10 seconds if you like it warmed.

    I don't like oatmeal at all, but I've been eating this to get more fiber in my diet, and it's very tasty! I'm partial to the oatmeal raisin flavor, myself. I buy a box of these and keep a couple in my purse and a couple in my car, so it's always there in case I need to eat something relatively healthy. My RD gave it the thumbs-up.

    Also note that this is NOT the same thing as the Quaker "breakfast cookie."

    Forgot to mention the fiber content. That oatmeal square has 5 g of fiber per serving, too.

    Oh yeah I agree about the organization. Part of my problem with having good food on hand is that when I buy lots of it I end up not eating it and it goes to waste. I hate spending a lot of extra money on stuff that may just get thrown out. I need to learn to actually EAT the good stuff. I like the apples with peanut butter. Nathan hates dips so far. He's weird.

    I generally do eat a LOT of chicken breast but I also really love deli turkey once in awhile just to change it up. And I have been trying to eat a lot more salad but sometimes I just can't bring myself to eat ONLY a salad instead of say, a sandwich.

    I suppose I need a blender to make those dips? I haven't actually got one. They sound good though. I could go for some natural chips and dips.

    by the way, jen, yoga class ROCKED yesterday. I think Mark and Kimber would agree. I must say that eating less and working out more makes the poses much easier for me :)

    #1 thing I love about yoga...the challenge!

    I'm glad that you liked yoga class. it was different than i expected it to be. I expected to do more vinyasa--but hey, class always goes a way different than i expect.

    i really should not have eaten ALL of that broccoli. it was literally 2 cups. So yummy, though, i couldn't stop. :) i think it's my favorite veggie. I'm like Forrest Gump's friend Bubba: 'broccoli quiche, broccoli rabe, broccoli with garlic, broccoli and cheese, broccoli in an omellet. . ."

    it is hard to figure out the balance between buying and eating. I know this too--because sometimes i over buy and then i have to toss and it's the saddest thign on the whole planet. I lost a pear today. I put it outside in the bushes so 'someone' will eat it, but it wasn't me. *tears* It can be a guessing game.

    You can make the dips without a blender, it just takes slightly longer and some elbow grease. essentially, place the ingredients in a bowl and mash away. and keep mashing until it gets to a consistancy that you like. sometimes, i don't like to clean the blender so i simply mash.

    today, i mashed torn spinach, feta cheese, goat's cheese (soft), garlic, and artichoke hearts (canned, rinsed, chopped), onions (chopped--left overs). I spread it over some ezekiel bread, put on some sliced tomato--and then grilled it. it was very tastey. :) had a few kalamata olives and finished off with an orange. Yum YUM!

    'zeke makes a great raisin-cinnimon bread that is so good with nut butter and all fruit jelly on it--to die for. great breakfast, honestly.

    and it's not 'crunchy' bread, btw. ;)
